Greg has a favorite breakfast place in Long Beach called Hoff’s Hut. If I were the owner I would omit the word Hoff’s and replace it with Jabba’s or Jabba The. On my last adventure with Greg I ordered Señor Hoff’s Breakfast tacos.
Three soft-fried corn tortillas stuffed with scrambled eggs, chicken, cheese, avocado and spicy dressing. The plate is served with refried beans of course. The next time you see Beth make sure and ask her about eating re-fried beans for breakast.
It’s my new favorite breakfast food. I’ve been working on the recipe, refining the ingredients. Yummy, Yum Yum! I tried it this morning with bbq chicken which added a new twist.
Anyone else a fan of the breakfast taco? What other combinations should I be trying?

Actually, my FAVORITE breakfast place is Angel’s Donuts! But when I have health-conscious people staying at the house, we try to impress them by going to the Hut.
Speaking of breakfast, Janice thinks I’ve spoiled Chipper because I give her two scrambled eggs each morning. Women …..

Breakfast burritos (better than tacos for in the car or with pre-schoolers) are regular fare in our house. It’s kind of like soup - we dump in pretty much put anything in that seems reasonable.
Start with the eggs, of course, and add anything that would work in an omelette: some kind of meat or go all veggie (salmon, ham, chicken, bacon), beans (black, refried), rice, veggies (potatoes, broccoli, tomatoes), salsa, lots of cheese…the possibilities are endless!
Hmmm…hungry now. Must go eat.

No tacos for breakfast. I repeat, no tacos for breakfast. I like tacos, but not for breakfast. Same goes for burritos and any other mexican food really. And especially not refried beans. I really can not state this strongly enough. I’m adding it to my food rules list.

I’m in total agreeement with Josh. You need help. First the Foie Gras and now breakfast tacos. Had you not mentioned tri tip recently, I would think you would be a candidate for an immediate food crisis intervention.
